About Honyama Sencha Yabukita

Honyama Sencha Yabukita is a premium grade Japanese green tea made from the popular Yabukita cultivar. The Honyama terroir is located 100 metres above sea level, near the Warashina and Abe rivers in Shizuoka. Tea master Mori San grows small plots of different green teas here, on land that his grandfather owned and also grew tea upon, and he continues to do so for the love of it. His passion for tea is clear from the smile on his face as he talked to us when we visited and showed us around his gardens. Using traditional machinery, Mori San has produced a beautiful Sencha that expresses the complex interplay between rich, vegetal sweetness and salty, savoury umami notes. For lovers of green tea, this tea has a classic, clear and pronounced Japanese tea profile.

 

About Shizuoka

Shizuoka is a famed region for producing outstanding green teas, with rich, mountainous soils and pure spring water nourishing the tea plants that flourish here. High elevated gardens are interspersed with dense forest and excellent biodiversity.

 

Cultivation & Processing

Mori San picks the leaves at the start of May, then lightly steams and rolls them. For making Sencha, he grows a small handful of different cultivars, each with its own distinct character. Comparatively, this Honyama Sencha Yabukita has a more classic Sencha taste - fresh, green, flowery and slightly saline - whereas the Honyama Sencha Koshun is rich and vegetal, and our Honyama Sencha Okimidori is balanced and fresh, like a honeydew melon or new tomato leaves. If you want to fully understand how cultivar nuances affect flavour profiles, why not explore them all at once?

How to Enjoy

Sencha goes incredibly well with steamed vegetables, seafood and squash dishes. Enjoy as the ideal accompaniment to your lunch or early dinner. For traditional Japanese brewing, brew 5g of Honyama Sencha Yabukita in 175ml of 75 degree water for 30 seconds.
