About Oolong tea
Oolong tea is a highly regarded Chinese tea that sits between green and black tea, both in taste and appearance, offering a remarkable range of flavours. The process of making Oolong is complex and requires great skill and knowledge. Based on the degree of fermentation, Oolong can feature a light, floral taste like green tea or a richer, spiced flavours more like black tea. Cultivation
The leaves for this Phoenix Dan Cong Oolong are cultivated in the renowned mountain region of Wudong in Guangdong Province at an elevation of over 1000 meters. "Dan Cong" translates to "single stem". The tea is harvested from one stem of a single bush from the Phoenix Shuixian varietal, grown with deep roots in misty mountain, mineral-rich soil that help create concentrated flavours. Pickers carefully pluck 3-4 leaves at a time, leaving them to wither outdoors and indoors before dancing the leaves on large bamboo plates. The leaves are then tossed and rolled before being left to rest under sheets and, finally, finished in wood fired ovens.
