Organic Matcha Sour Cocktail

Here’s how to make a seriously simple (and seriously delicious) Organic Matcha Sour Cocktail for hot summer days. You can follow the recipe with or without alcohol (though you will need a zero proof alternative like Seedlip). Stay tuned over the coming weeks for more Matcha summer drinks recipes, too.

Recipe serves 1

Organic Matcha Sour Cocktail Ingredients

• 3g Organic Matcha Ceremonial Grade Fuji
• 1 tbsp 80-degree water
• 50ml gin (or zero proof alternative)
• 25ml lemon juice
• 50ml simple syrup
• 1 egg white

Method

• Sift the Matcha powder into bowl or press whisk down several times to break up and loosen the powder. Add 10ml of room temperature water and whisk to a paste, then add 60ml hot water (60°C) and whisk briskly until a consistent, frothy layer is formed.
• Add all ingredients to a shaker and ‘dry shake’ vigorously for at least a minute
• Add ice to the shaker and ‘wet shake’ until the body of the shaker has iced over
• Use a cocktail strainer to pour into a glass, shaking to ensure you get all the froth and a nice head on the cocktail
• Garnish with more Matcha, edible flowers, or lemon zest

Note: if you like, you can use a flavoured syrup instead of the simple syrup. We had some elderflower syrup to hand when we made this and it added some super floral notes that we very much enjoyed.
